The Original Breakfast Cone

we love breakfast burritos! but our little kids
have little hands {go figure} and the eggs tend to fall out.
it really makes a mess and takes all the fun out
of it :( when they have to eat it with a fork.
so last week,
The Breakfast Cone
was invented! {kudos to my genius husband!}


lucky for you, he gave me permission to share his brilliant idea!


first, preheat the oven to 400°F.  next, spray a baking sheet with
cooking spray.  warm the flour tortillas in the microwave {this makes them 
more pliable...so they don't rip.}  

now you're ready to make the cone...  pleat one side of the tortilla and fold into a cone-shape.
you'll want to secure it with a toothpick, as shown.


spray the cone-shaped tortillas with cooking spray.
if you want to, you can now line the inside of the cone
with turkey bacon {healthy!}



avoid collapsed cones ↑
by propping them open
with a toothpick ↓



bake for 15-18 minutes or until golden and crispy
{you can decide how crisp you like it}

while it's getting good and crispy, scramble some eggs...
we used Deceptively Delicious Scrambled Eggs {using mostly egg whites}
~ they're oh so good!


if you prefer you can fill it with an omelet or however you like your eggs.



now that it's baked, remove both toothpicks and get ready to fill it...












add your favorite toppings...
we like sour cream {light is great!} and homemade salsa.
mmmmm!
