Banana-Blueberry Muffins {Sneaky}

my mom shared this recipe with me a few years ago
&
it's delicious!

but, i've made it {sneaky}!

i'll share both versions with you, and you can decide...


ingredients

2 eggs  OR {1/2 cup firm tofu, mashed}

1/4 oil  OR {1/4 cup unsweetened applesauce}

1/2 cup brown sugar

{1/2 cooked, pureed sweet potatoes, or carrots, or both... 
or you can substitute carrots or sweet potatoes baby food!}

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups flour OR
{blend equal parts of white flour, whole wheat flour and wheat germ and measure 1 1/2 cups}

2 bananas, mashed or sliced

1 cup fresh or frozen blueberries


preheat oven to 350°. use liners or spray the muffin pan.

in a bowl, mash bananas, whisk eggs {or tofu}, oil {or applesauce},
brown sugar {and pureed carrots/sweet potatoes/baby food}.

in separate bowl, combine dry ingredients.

stir dry ingredients with wet ingredients, except blueberries, until moist.

slowly add blueberries.  fill muffin pans 1/2 full.

bake 12-15 minutes, or until toothpick comes out clean.



i had to snap this picture while they were still in the pan,
because once they come out ~ they're gone!
